Summer Salsa


It's starting to feel like summertime here in the O-H-I-O and yesterday I whipped up one of my favorite summer snacks — corn salsa. 
The key to great summer snacks is they have to be super easy and this recipe can't get any simpler.



Start by dicing one large tomato and then chop up about a cup of cilantro. Combine the tomato and cilantro in a large mixing bowl and squeeze the juice of a one lime on it.


While your other ingredients hang together chop up a medium-size red onion and add it to the mix.


Then add two ears of fresh corn. (The best way to do this is to stand the ear up in the mixing bowl and use a knife to slice the kernels off.) Give it a quick stir and a dash of both salt and pepper. Let your salsa sit for about five minutes to mingle and then it will be good to go.
